Great idea with the chicken! You can definitely do a lot with chicken. You have a good list with the store brand cereal/item and frozen vegetables. I do notice they can be cheaper compared to the brand/fresh alternative. Instead of the pasta/ramen, I’d sub it for something low carb like spaghetti squash. If I had flour, egg, salt, and milk at home, I can instead make noodles from scratch (https://catherine-academia.medium.com/how-to-make-souplantations-chicken-soup-b48e591bb4bb).
