How to Make Souplantation’s Chicken Soup

My version of Souplantation’s Chicken Soup is the first recipe from my self-published cookbook on Amazon, The Self-Love Quarantine 2020 Cookbook: Simple, Delicious, and Healthy Recipes for One.

I’ve tried many chicken noodle soups, but nothing compares to the chicken noodle soup at Souplantation. It doesn’t taste like anything that comes from a can. The part that I love most about Souplantation’s chicken noodle soup would have to be the noodles.

To my surprise, per the Souplantation blog, the noodles only required flour, egg, milk, salt, and water. The precise measurement were not given. I had to browse other websites to find one that came close to that list of 5 ingredients.

Making the chicken noodle soup is a 2-part process 1) preparing the chicken and broth and 2) preparing the noodle. I will briefly go over the first part now. I will later discuss and go into detail on how to prepare the noodle, because it’s more involved.

To prepare the chicken and broth, you will need to cook it in water and bring it to a boil over high heat. Take a ladle and take out all the nasty foam off the top of the soup. Then, lower the heat to about medium to keep it at a steady boil for about 30 minutes before removing the chicken from the water broth and separating the meat from bone. To make the broth clearer and healthier,
refrigerate the broth. The fat will solidify and you can more easily remove more of the fat content. To add flavor to the broth, you can sprinkle in a little bit of salt and sugar. You can then toss the prepared chicken and noodles in the broth to heat up.

To make the noodles, you will need the following ingredients:

- 1 egg
- 1⁄2 tsp salt
- milk
- 1 cup all-purpose flour

I intentionally omitted the measurement for milk. I made the noodles multiple times. The dough sometimes was too wet, so I had to add more flour to make it less wet. I’ve used different types of non-dairy milk, so I believe the measurements may vary depending the type of…
